A tribute to Giorgio Rosa, the Bologna engineer who in 1968 founded an independent state off the coast of Romagna. He changed the rules. He stirred the European Parliament. Today, it's a cocktail.

Ingredients:

  • 4 cl Gin Balena Pink
  • 3 cl Bianco Sarti (Rimini white vermouth)
  • 1.5 cl fresh lemon juice
  • 0.5 cl elderflower syrup
  • 2 dash Angostura bitter
  • 3-4 fresh mint leaves
  • 2 thin slices of ginger
  • Ice

Method::

An ice-cold double cocktail coupe (chilled in the freezer for at least 30 minutes). Dry shake for 5 seconds to emulsify the mint and ginger, then shake with ice for 12-15 seconds until the shaker frosts over. Double strain (Hawthorne strainer + fine strainer) into the coupe.

Garnish::

Expressed orange peel, mint leaf in the centre.
